  1. Saute onions: Add the oil and sliced onions to a large skillet over medium-high heat. Sauté until caramelized, a deep golden brown, about 7-10 minutes. Remove French onion sauce and set aside on a plate.
  2. Cook the chicken: Add the chicken breasts and cook on each side for 3-4 minutes or until cooked throughout and no longer pink. Set aside with the onions.
  3. Whisk together sauce: Melt the butter in your skillet, then add the flour and stir until combined. Add the beef broth, oregano, thyme, and salt and pepper to taste, and let simmer for 1-2 minutes until it starts to thicken.
  4. Combine all ingredients: Reduce heat to a simmer and add chicken and onion gravy back to the dish. Top with shredded Swiss cheese and provolone.
  5. Broil: Place the dish in the oven and broil for 1-2 minutes or until the cheese is melted.
